This started as an escape route from another week of reheated meal-prep boxes. The goal was food that could come straight from the fridge and still feel alive: cold melon, torn herbs, peppery leaves, warm oregano chicken and enough acidity to pull every bite into focus. It packs beautifully, but nobody at the table needs to know that.

Build the marinade

Whisk the olive oil, lemon zest and juice, garlic, oregano, Dijon, salt and pepper. Coat the chicken completely, working the marinade into every surface. Refrigerate for 20 minutes, or up to 8 hours.

Roast until deeply golden

Heat the oven to 220°C / 425°F. Let the chicken lose its fridge chill while the oven heats. Arrange it on a lined tray with space between each breast and roast until the thickest point reaches 74°C / 165°F.

The edges should be bronzed, the oregano toasted and the juices clear when the thickest breast is pierced.
Use the thermometer, not colour alone, to confirm doneness.

Rest before slicing

Move the chicken to a clean board and rest for 8 minutes. Slice across the grain into broad pieces, spooning any resting juices back over the top.

Whisk the dressing

Whisk the yogurt, balsamic, olive oil, Dijon, honey and salt. Add cold water a teaspoon at a time until it falls from the whisk in a thick ribbon. Taste for enough salt and acid.

Assemble for contrast

Toss spinach and arugula with just enough dressing to lightly gloss the leaves. Layer over the melon, cucumber, tomatoes and onion. Add warm chicken, torn bocconcini and prosciutto. Finish with seeds and more dressing at the table.

Pack it without sacrificing texture

For meal prep, cool the chicken fully. Pack dressing in sealed pots, greens with a dry paper towel, and melon, tomatoes and cucumber in a separate compartment. Keep prosciutto and seeds dry. Combine only when ready to eat.

Store
Store cooked chicken and prepared vegetables in airtight containers for up to 3 days. Keep leaves, dressing, prosciutto and seeds separate. Cut melon is best within 2 days for the cleanest texture.
Reheat
This salad is designed to eat cold or with room-temperature chicken. If preferred, microwave chicken alone in 20-second bursts until just warm; overheating dries the breast and wilts the salad.
